Salmon with Mango Salsa & Cauliflower Rice



This dish was so good!! My husband isn't a fish fan, but he had seconds, that's when you know it's good!!
Make the salsa first so you can add it to the Salmon as soon as it is done.

Here’s the ingredients to make 4-6 servings of salsa:
  • 2 cups diced ripe mango (about 2 mangos)
  • ½ cup finely diced red onion
  • 1 cup diced Hass avocado (1 medium avocado)
  • ¼ cup minced fresh cilantro
  • 2 tablespoons extra virgin olive oil
  • freshly ground black pepper
  • big pinch of kosher salt
  • ¼ teaspoon red pepper flakes
  • Juice from 1 lime
Directions
1. Grab two ripe Mango's and dice them up.
2. Place the diced mango in a bowl
3. Add all the other ingredients and mix up, season if desired.

Now for the Salmon
1. Preheat oven to 350 F
2. Season the Salmon with Salt & Pepper
3. Put the Salmon in a tin foil packet and bake for 10-15 min
4. Take Salmon out of the tin foil and place on plate.
5. Add the salsa and enjoy!


Cauliflower Rice
Ingredients
  • a small head of organic cauliflower, chopped coarsely
  • 1 small onion, chopped finely in a food processor
  • 2 tablespoons of butter
  • 1-2 tablespoons of coconut oil
  • Aleppo chile finishing salt
  • Trader Joe’s 21 seasoning salute
  • salt and pepper
Directions
1. After chopping up the cauliflower throw the pieces into a food processor.
2.Pulse the contents until they are reduced to the size of couscous or rice grains. 
3.  Saute the onions in the melted butter and coconut oil over medium heat until they are translucent. 
4.When the onions are soft,  dump in the cauliflower and stir everything around to evenly distribute the fat and onions.
5. Season the “rice” with some Aleppo chile finishing with salt and pepper. 
6. Cover the skillet and cook the cauliflower for 5-10 minutes until softened. taste it for seasoning and add some Trader Joe’s 21 seasoning salute and additional salt and pepper. 

I got this recipe from nomnompaleo.com I don't have a Trader's Joe over here so I used Mrs. Dash seasoning.
